April 2013 Reading List

I have read 46 books this year so far even thought this month I was a little slow at reading. I think I am going to make it a goal to read 120 books by the end of the year which would average out to 10 books per month.

I  purged a banana box full of books off my bookshelves at the end of 2012 and I only have what I really want to keep left. Therefore, I am on a mission this year to read the book from my shelves at home, not buy many new books from the thrift stores, and borrow a little less from the library. I am donated the books when I am finished each month and so far this year that includes 6 books.

I did purchase Beth Shaw's YogaFit by Beth Shaw this month for my Certified Yoga Instructor Training that I completed this past weekend. Along with the course manual, DVD, and music cd that came with the course.

Sassy Water

8 ½ cups water
1 teaspoon freshly grated ginger
1 medium cucumber, peeled and thinly sliced
1 medium lemon, thinly sliced
12 small spearmint leaves.

Combine all ingredients in a large pitcher and let flavors blend overnight. Drink the entire pitcher by the end of each day.

Apple Dump Cake

24 ounces, apple pie filling (2 Cans)
2 Tablespoons cinnamon
1 box yellow cake mix
2 sticks butter
1 cup old fashioned oatmeal

Dump two cans of apple pie filling into a 9×13 pan. Sprinkle with cinnamon. Crumble the dry cake mix over the apple mixture. Sprinkle the oatmeal over the cake mix. Slice the butter up into 12 equal pieces, and place the pieces on top.

Cook at 375F for about 50 minutes or until golden brown. Serve with whipped cream or vanilla ice cream.

Monkey Bread Minis

½ cup butter or margarine, melted
½ cup packed brown sugar
¼ cup granulated sugar
2 teaspoons ground cinnamon
2 cans (7.5 oz each) refrigerated biscuits

Grease or spray 12 regular-size muffin cups. In a bowl, combine melted butter and brown sugar, stir until well mixed. In another bowl, combine the sugar and cinnamon and mix well.

Separate dough into 20 biscuits; cut each in 6 pieces. Dip 6 biscuit pieces at a time in the butter mixture and then into the cinnamon and sugar bowl. Place 10 pieces in each muffin cup. Bake at 350°F for 12 to 15 minutes or until golden brown. Cool 1 minute; turn upside down. Serve warm.

Three Bean Salad

 
 
 
 
 
 
 
 
 
 
 

1/2 small onion, minced
2 stalks celery, chopped
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can garbanzo beans, drained and rinsed
1 (15 ounce) can cut green beans, drained and rinsed
1/2 cup vinegar
1/4 cup oil
1/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon celery seed
1/4 teaspoon ground black pepper
 
Combine onion, celery, kidney beans, garbanzo beans, and green beans in a mixing bowl. Add olive oil, vinegar, sugar, salt, celery seed, and black pepper to bean mixture; gently stir to coat. Cover bowl and chill completely 2 to 4 hours.

Note: You can substitute the variety of beans with other types and still have a great bean salad.
